Peruvian food draws on the traditions of the Incans and the cultures before them—Spain, Africa, Japan & China—resulting in a very colorful and diverse cuisine. Dinner will highlight this culinary history through some of Peru's most classic dishes. Traditional ingredients will be used wherever possible with exceptions made to stay seasonal and local when necessary.

After graduating college, Holly Pérez studied wine in Chile on a Fulbright Scholarship. For the next several years she guided and organized culinary and cultural tours throughout Chile, Bolivia, and Peru while collecting and developing recipes from any grandmother or restaurant that invited her into their kitchen. She went on to graduate with honors from the Culinary Institute of America in New York, and work at Chez Panisse Café and Restaurant in Berkeley, CA, for five years. Today she enjoys combining her appetite for Latin American food and culture with a commitment to seasonal and sustainable ingredients through catering and teaching classes.

SCRIBE Winery produces vibrant, terroir-driven wines from Sonoma, California. The winery—founded in 2007—is managed by fourth-generation California farmers and brothers, Andrew and Adam Mariani. Andrew and Adam believe that the best wines are a result of a healthy relationship between man and nature, and that a vineyard managed in harmony with the greater ecosystem results in more site-specific wines that represent a sense of place.
